Parrano's green gold.
Umbria has always cultivated the olive. At Parrano the trees thrive naturally, yielding extra virgin olive oil of rare quality. The olives — mostly Moraiolo, Frantoio and Leccino — are hand-picked and pressed immediately, at controlled temperature and in the absence of oxygen.
An oil rich in antioxidants and polyphenols, beneficial for the heart and overall health, as the most authentic Mediterranean tradition demands.
Curiosity — Here, in the early 1900s, Amilcare Baglioni — collaborator at the Principato — invented cold pressing under 27 degrees.

Ancient roots, modern wines.
In a land whose vocation for winegrowing was already recognised in antiquity — thanks to the celebrated Etruscan-Roman Wine Route — several grape varieties have been recovered and given new life, including Chardonnay, Sangiovese, Montepulciano, Canaiolo and Pinot Noir.
The goal is to produce ambitious wines: through targeted agronomic practices, organic methods, a deliberately low yield per plant, and careful selection of the grapes, we aim for wines of the highest quality.
Curiosity — A tradition rooted in 1897, when the agronomist Giuseppe Florio used these vineyards to produce a wine distributed on every carriage of the Italian railway network and on the Orient Express.

The gifts of the earth.
Crops of cereals, fodder and legumes across the estate's 200 hectares of arable land. A system that reduces the need for external inputs, supplies the castle and feeds the livestock directly.
The cycle is closed: the land nourishes the animals, the animals return to the land. An ancient balance, guided by a contemporary agricultural vision.

The treasure hidden among the oaks.
The estate valleys possess all the characteristics for ideal truffle development: a fresh and ventilated environment, humid along streams and ditches, natural ponds and valley bottoms, soils that are calcareous, sandy-loamy and clayey.
Especially near oak trees, poplars, lindens and willows — and among shrubs such as juniper, wild rose and oak. On the estate truffles are hunted across many seasons of the year, accompanied by expert hunters and their dogs.

Chianina & Cinta Senese.
950 hectares between stables, pastures and woodland can host up to 1,000 Chianina cattle. The Chianina breed, like the Cinta Senese, lives free-range in the pastures and oak woods of the estate.
Extensive breeding, respectful of the animals' natural rhythms. The meat — of rare quality — reaches the castle kitchens and our tables, in a virtuous cycle that keeps alive one of Italy's most noble zootechnical traditions.

From the woodland, with care.
The Principato's bees live at the edge of the woodland, among the estate's wild flora. The honey — produced in small quantities — tells the story of the territory: wildflowers, chestnut, oak woodland.
An artisanal, non-industrial production that follows the rhythms of the seasons and respects the colonies. The Principato's honey reaches the castle tables and can be purchased directly from the estate.

The estate's green lung.
Over 900 hectares of woodland embrace the estate, preserving original ecosystems of oak, hornbeam, maple and beech. Sustainable forestry yields twenty hectares of timber per year — for building and for firewood — without compromising the forest's natural balance.
The undergrowth is habitat to the truffle, refuge for wildlife and an ecological corridor between the valleys. A living forest — not ornamental: managed, respected, productive.
Curiosity — The Principato is committed to sustainability. The future Carbon Credits generated by sustainable forest management may be purchased by companies and individuals wishing to achieve their carbon neutrality.
